For the 11 people that voted “yes” on social media when I asked if anyone would be curious to hear what I’d make with the current Yon Family Farms Beef Special.. here we are!

If you’re not familiar, our family owns a small country store in town where we sell our own pecans, local beef from our farm and other goods produced by other small producers (primarily from South Carolina). Every two weeks or so we’ve been offering a beef special with a few different cuts of meat and sometimes an extra item or two (like biscuits!). If I was grabbing this week’s special, here is what I’d make for my family!
Breakfast
- Breakfast Casserole with ground beef sausage, Callie’s Biscuits, and fruit
- You really can use any meat you’d like in breakfast casserole (pork, ham, bacon, etc) but this recipe from BEEF It’s What’s For Dinner takes plain ground beef and transforms it into delicious breakfast sausage.
- Once you have the ground beef sasuage made, here’s my recipe for breakfast casserole. It’s easy to make ahead and freeze too!
Lunch
- Mexican Salad with Shredded Roast Beef
- This one requires thinking ahead a little before meal time, but I’d cook the roast in the crockpot. I typically opt to make roast pretty “neutral” in flavor, but if you want to commit to a “Mexican” style roast, you can simply toss it in the crockpot with a jar of salsa. Sometimes I season a roast by cooking in balsamic salad dressing or the juice from a jar of banana peppers – and if I don’t have either of those things, sometimes I just throw it in the crock pot with a little beef broth.
- After cooking in the crockpot for ~4-6 hours on high (~6-8 hours on low depending on the size), I’d serve over a bed of lettuce with shredded cheese, salsa, black beans, corn, avocados, jalapeños, ranch dressing (or sour cream) and tortilla chips.
Dinner
- Fried Cube Steak served with rice and roasted broccoli
- Fried Cube Steak is a family favorite! Our go-to recipe from The Pioneer Woman only uses a dry dredge (no milk/eggs) and I honestly prefer it. It’s less dishes, less mess, and tastes a little lighter!
- We serve Fried Cube Steak with steamed rice (white or brown, whatever you prefer) and roasted broccoli (wash, chop, roast on a sheet pan for ~35ish mins @ 400° with a little olive oil and garlic salt). It you like it crispier, finish with a few minutes on broil. If you’re starting with frozen broccoli you may need to adjust the cooking time in order to get it crispy.
